Creamy Bruschetta

Ingredients

  • 1⁄2cup mayonnaise

  • 1cup mozzarella cheese, grated

  • 2tomatoes, diced, to taste

  • 2tablespoons parmesan cheese

  • 1teaspoon oregano

  • 1⁄2teaspoon pepper

  • 1⁄4teaspoon basil

  • 1minced garlic clove, to taste

Melon, Mozzarella, and Prosciutto Skewers

Ingredients

  • 20 (1-inch) cantaloupe or honeydew cubes (about 2 1/2 cups)

  • 20 thin slices prosciutto (about 1/2 lb.)

  • 20 fresh small mozzarella cheese balls (about 1 [8-oz.] tub)

  • 20 (4-inch) wooden skewers

  • Freshly cracked pepper

Egg and Anchovy Crostini

Ingredients

  • Sea salt

  • 4 extra-large eggs
