Roasted Asparagus with Almond Vinaigrette

Ingredients

  • Two 1-pound bunches thick asparagus, ends trimmed

  • 1 tablespoon olive oil

  • Kosher salt and freshly ground black pepper

  • 6 tablespoons blanched sliced almonds

  • 1 1/2 tablespoons lemon juice

  • 1/4 teaspoon sugar

  • 1 1/2 teaspoons lemon zest

Wok Seared Sesame Green Beans

Ingredients

  • 1 1/2 pounds green beans, trimmed

  • 1 1/2 tablespoons oriental sesame oil

  • 3 tablespoons soy sauce

  • 1 1/2 tablespoons rice vinegar

  • 1 1/2 tablespoons (packed) golden brown sugar

  • 1/4 teaspoon ground black pepper

  • 2 tablespoons sesame seeds, toasted

Bacon wrapped Asparagus

Stir Fry Tofu with Green Beans

Ingredients

  • 1 14-ounce package firm or extra firm tofu

  • 2 cups roughly chopped green beans

  • 1 cup diced carrots or red pepper

  • 2 Tbsp toasted sesame oil for sautéing (or sub peanut or coconut)

  • For the Sauce

  • 1/4 cup low-sodium soy sauce (make sure it’s gluten free if G-Free)

  • 1 Tbsp fresh grated ginger

  • 2 Tbsp brown sugar

  • 1 Tbsp agave, maple syrup (or honey if not vegan)

  • 1 Tbsp corn starch
