Chocolate Mousse

Ingredients

  • 8 ounces chocolate chips

  • 6 tablespoons water

  • 2 teaspoons vanilla

  • 2 cups whipping cream

  • 1/4 cup confectioners’ sugar

Directions

  1. Melt chocolate and water in saucepan

  2. Whisk in the vanilla

  3. Allow to cool

  4. Whip the cream

  5. Add the confectioner’s sugar

  6. On low beater, blend in the chocolate

  7. Scoop the Chocolate Mousse into a clear, glass bowl

  8. Garnish with grated chocolate or some of the chocolate from the pan drizzled on top

Cherries Jubliee

Ingredients

  • 15 ounces pitted dark cherries in juice

  • 1teaspoon cornstarch

  • 2tablespoons brown sugar

  • 2tablespoons kirsch (optional) or 2 tablespoons brandy (optional)

  • 2cups non-fat vanilla frozen yogurt

Directions

  1. Drain the juice of the cherries into a saucepan

  2. Whisk in the cornstarch and brown sugar

  3. Bring mixture to a boil over high heat

  4. Add cherries and stir to coat. Remove from heat and add carefully the brandy or kirsch. Return to heat and cook 1 minute

  5. Scoop frozen yogurt into 4 bowls and spoon warm mixture on top.

Tiramisu

Ingredients

  • 2 -3cups strong plunger espresso coffee, cooled to room temp

  • 3tablespoons Tia Maria (or another liqueur, but the coffee flavour is really enhanced)

  • 2eggs, separated

  • 1⁄4cup caster sugar

  • 250g mascarpone cheese

  • 1cup cream (anything that will hold the peaks heavy whipping cream works fine as will anything 36% milkfat or hi)

  • 250g ladyfingers (savoiardi)

  • cocoa powder, for dusting
