Wholesome Oatmeal Recipe Ideas

Oatmeal-Rhubarb Porridge

Ingredients

  • 1 1/2 cups nonfat milk or nondairy milk, such as soymilk or almond milk

  • 1/2 cup orange juice

  • 1 cup old-fashioned rolled oats

  • 1 cup 1/2-inch pieces rhubarb, fresh or frozen

  • 1/2 teaspoon ground cinnamon

  • Pinch of salt

  • 2-3 tablespoons brown sugar, pure maple syrup or agave syrup

  • 2 tablespoons chopped pecans or other nuts, toasted (see Tip) if desired

Oatmeal & Strawberries

Ingredients

  • Add 1/4 cup nonfat Greek yogurt

  • 1 tablespoon honey

  • 1/4 cup sliced strawberries to oatmeal and stir well

  • Garnish with strawberry halves

Spinach, Tomato and Feta Oatmeal

Ingredients

  • 2 teaspoons fresh lemon juice

  • Kosher salt and freshly ground black pepper

  • 1/8 teaspoon crushed red pepper, optional

  • 2 cups old-fashioned rolled oats

  • One 5-ounce package fresh baby spinach

  • 1 cup grape tomatoes, halved

  • 3/4 cup crumbled feta

  • 2 tablespoons extra-virgin olive oil

  • 2 teaspoons finely chopped fresh dill

  • 2 scallions, thinly sliced

  • Kalamata olives, sliced, optional
