Beet and Brown Rice Sliders

Ingredients

  • 16 thin slices sourdough bread

  • Cooking spray

  • 1 cup cooked, cooled whole-grain brown rice blend

  • 3/4 cup grated cooked beet (about 1 medium)

  • 1/2 cup panko (Japanese breadcrumbs)

  • 6 tablespoons chopped walnuts, toasted

  • 1/4 cup chopped fresh flat-leaf parsley

  • 2 tablespoons finely chopped shallots

  • 1/2 teaspoon kosher salt

  • 1/4 teaspoon freshly ground black pepper

  • 2 tablespoons Dijon mustard

  • 1 large egg

  • 2 tablespoons olive oil

  • 1 (3-ounce) log goat cheese, sliced crosswise into 8 slices

  • 1 cup watercress

Roasted Beet Crostini

Ingredients

  • 1 bunch beets with greens attached, (see Tip)

  • 16 1/2-inch-thick slices baguette, preferably whole-grain, cut on the diagonal

  • 2 tablespoons extra-virgin olive oil, divided

  • 6 cloves garlic, minced

  • 1 tablespoon sherry vinegar, or red-wine vinegar

  • 2 tablespoons water

  • 1/4 teaspoon salt

  • 4 ounces creamy goat cheese

  • 1/4 teaspoon freshly ground pepper

Roasted Beets

Ingredients

  • 4 beets, peeled and cut into 3/4-inch cubes

  • 2 tablespoons olive oil

  • 1 teaspoon dried thyme leaves (optional)

  • 1 pinch sea salt, or to taste

Beet-Filled Eggs

Ingredients

  • 2 medium red beets, scrubbed

  • 1 garlic clove, finely grated

  • ½ cup Parsley Mayo (click for recipe)

  • ⅓ cup walnuts, coarsely chopped

  • ¼ cup prunes, chopped

  • 2 tablespoons fresh lemon juice

  • Kosher salt

  • ¾ cup store-bought pickled beets, finely chopped

  • 8 hard-boiled large eggs

  • 1 small golden beet, peeled, halved, thinly sliced

Beets with Goat Cheese, Nigella Seeds, and Pistachios

Ingredients

  • 2 tablespoons chopped raw pistachios

  • ¼ cup plus 1 Tbsp. white wine vinegar

  • ¾ teaspoon hot smoked Spanish paprika, divided

  • Kosher salt

  • 1 pound beets, scrubbed, peeled, cut into ½” pieces

  • 4 oz. fresh goat cheese, crumbled, divided

  • Freshly ground black pepper

  • 1 teaspoon nigella seeds

  • Flaky sea salt (such as Maldon)

  • Olive oil (for serving)
