Creamy Pumpkin Pasta Sauce

Ingredients

  • 1 Tablespoon olive oil

  • 4 cloves garlic, grated or finely minced

  • 1 can pumpkin puree (about 2 cups)

  • 1 cup milk

  • ½ teaspoon salt

  • 1 tablespoon vinegar

  • ¼ teaspoon dried oregano

  • ½ teaspoon dried basil

  • dash of chili powder

  • garnish: fresh herbs, Parmesan cheese

Chickpea and Vegetable Stir Fry

Ingredients

  • ½ red onion, julienned

  • ½ red bell pepper, julienned

  • 8 Brussels sprouts, quartered

  • 1 15-ounce can chickpeas, drained (400 g)

  • Sesame seeds (optional)

For the sauce:

  • ½ cup water

  • ½ cup soy sauce or tamari

  • 2 tbsp coconut or cane sugar

  • 2 tsp cornstarch

  • Sriracha sauce to taste

Baked Chicken and Brown Rice with vegetables

Ingredients

  • 6 4 ounce boneless skinless chicken thighs

  • 1½ cups brown rice

  • 3 cups chicken stock (boiling hot)

  • 2 tablespoons butter (optional)

  • Salt and pepper to taste

  • 2 lbs sliced carrots 1 bag 12 oz. frozen peas
