Healthy Recipe Ideas For Two Or More

When you get home from work you don't always want to cook especially after a long day at the office and if you live alone. But if you're having a girlfriend(s) over you may decide that instead of going to a nice restaurant which you do regularly you may want to stay in and cook for you and your friend. Grilled Balsamic Chicken Salad with Spiced Pecans

Ingredients

  • Cooking spray

  • 2 (6-oz.) skinless, boneless chicken breast halves

  • 1/4 teaspoon freshly ground black pepper

  • 1/8 teaspoon kosher salt

  • 3 tablespoons pecan halves

  • 1 tablespoon light brown sugar

  • 1 teaspoon butter

  • 1/4 teaspoon hot sauce (such as Tabasco)

  • 4 teaspoons extra-virgin olive oil

  • 1 1/2 teaspoons balsamic vinegar

  • 1/2 teaspoon Dijon mustard

  • 1/2 teaspoon minced garlic

  • 4 cups arugula leaves

  • 1/2 cup fresh raspberries

Seared Shrimp Vindaloo With Vegetables

Ingredients

  • 2 Tbs. extra-virgin olive oil, divided

  • 1 Tbs. vindaloo seasoning

  • 1/2 pound shrimp, peeled and deveined

  • 1/2 red onion, thinly sliced

  • 1 carrot, chopped into bite-sized pieces

  • 1/2 head of broccoli, broken into florets and ends trimmed

  • 3 cloves garlic, minced

  • 1/2 bunch kale, roughly chopped

  • 1/2 bunch collard greens, roughly chopped

  • Coarse salt and freshly ground pepper

Chicken With White Beans and Tomatoes

Ingredients

  • 2 -15.5-ounce cans cannellini beans, rinsed

  • 1 pint grape tomatoes

  • 4 sprigs fresh thyme

  • 4 sprigs fresh oregano, plus leaves for garnish

  • 2 garlic cloves, smashed

  • 1/4 teaspoon crushed red pepper

  • 2 tablespoons olive oil

  • Kosher salt and black pepper

  • 8 bone-in, skin-on chicken thighs (about 3 pounds total)

Seared Tilapia With Watercress-Mango Salad

Ingredients

  • 4 tilapia fillets (about 1 1/4 pounds total), halved lengthwise

  • kosher salt and black pepper

  • 1/4 cup plus 2 teaspoons olive oil

  • 2 tablespoons fresh lime juice

  • 2 teaspoons honey

  • 2 teaspoons grated fresh ginger

  • 1/4 teaspoon crushed red pepper

  • 6 cups watercress (from 1 to 2 bunches), thick stems removed

  • 1 mango, cut into small pieces

  • 1/2 medium red onion, thinly sliced
