Easy & Healthy Kale Recipe Ideas To Try Out

Kale is a hardy cabbage of a variety that produces erect stems with large leaves and no compact head. Kale has many health benefits some of them are that it is rich in Vitamin A, Vitamin C, Vitamin K, Manganese, Iron, Omega-3 fatty acids, Protein and a whole host of other health benefits. Kale is also considered an anti-inflammatory and is great for detoxification that's why more and more people are drinking green juices that contain Kale and other greens. It took me a while to get into Kale but now I love it. I have Kale with eggs and whole wheat toast for breakfast. I'll have a Kale salad bowl for lunch and then Kale with Quinoa and salmon for dinner. I don't have this everyday, because sometimes after a long day at work, I don't always have time. So when I don't have this, I make sure that I have a Kale smoothie daily. Since work and other everyday tasks sometimes keep us from preparing meals on a daily basis I thought I'd give you some easy and healthy kale recipe ideas to try out. Whole-Grain Spaghetti With Kale and Tomatoes

Ingredients

  • 6 ounces whole-grain spaghetti

  • 2 tablespoons olive oil

  • 1 medium red onion, thinly sliced

  • 2 cloves garlic, chopped

  • kosher salt and black pepper

  • 1 bunch kale, thick stems removed and leaves torn into bite-size pieces (about 8 cups)

  • 2 pints grape tomatoes, halved

  • 1/3 cup chopped roasted almonds

  • 1/4 cup grated pecorino (1 ounce), plus more for serving

Quinoa With Mushrooms, Kale, and Sweet Potatoes

Ingredients

  • 1 cup quinoa

  • 2 tablespoons olive oil

  • 2 small sweet potatoes (about 1 pound), peeled and cut into ¾-inch pieces

  • 10 ounces button mushrooms, quartered

  • 2 cloves garlic, thinly sliced

  • 1 bunch kale, stems discarded and leaves torn into 2-inch pieces

  • ¾ cup dry white wine

  • kosher salt and black pepper

  • ¼ cup grated Parmesan (1 ounce)

Kale With Roasted Peppers and Olives

Ingredients

  • 2 large bunches kale

  • 2 tablespoons olive oil

  • 2 cloves garlic, thinly sliced

  • 2 teaspoons sugar

  • 1 teaspoon salt

  • 12 Kalamata olives, pitted and chopped

  • 1 (4-ounce jar roasted red peppers)

  • 2 tablespoons aged balsamic vinegar

Kale-Apple Smoothie

Ingredients

  • 3/4 cup chopped kale, ribs and thick stems removed

  • 1 small stalk celery, chopped

  • 1/2 banana

  • 1/2 cup apple juice

  • 1/2 cup ice

  • 1 tablespoon fresh lemon juice
