Recipe Ideas For The Cold Weather

The temperature in NYC is dropping day by day and its starting to get darker earlier and after a long day at the office you might just want to go home where it is warm and toasty and just relax since its freezing outside. I've been trying different types of soup the last few days. Since its so cold outside and will continue to get colder as winter officially starts on December 1st, I thought I'd share with you some comfort food recipe ideas to try out for the cold weather. Ingredients
For the soup:
2 tablespoons olive oil
1 large onion, chopped
2 medium cloves garlic, thinly sliced
3 pounds plum (Roma) tomatoes, cut into 1-inch pieces
1 15-ounce can cannellini beans, rinsed and drained
1 sprig fresh rosemary
4 cups water
6 tablespoons freshly grated Parmesan
For the garnish:
12 cherry tomatoes, sliced or quartered
1 tablespoon olive oil
1 teaspoon red wine vinegar
Salt and pepper, to taste
12 basil leaves, thinly sliced
Ingredients
1 (8-ounce) carton reduced-fat sour cream
3 tablespoons no salt-added tomato paste
1 teaspoon Worcestershire sauce
1/2 cup all-purpose flour
1 teaspoon salt
1/8 teaspoon freshly ground black pepper
2 pounds boneless sirloin steak, cut into (2-inch) strips
1 tablespoon butter
1/2 cup chopped onion
1 (14-ounce) can less-sodium beef broth
2 cups sliced mushrooms
Chopped fresh parsley (optional)
8 cups cooked medium egg noodles (about 7 cups uncooked pasta)
Ingredients
4 large ears fresh sweet corn
Cobs
6 oz. thick-cut bacon
1 sweet potato
1 large vidalia onion
3 tbsp. butter
1½ tsp. salt
4 clove garlic
2 tsp. minced fresh rosemary
¼ tsp. Freshly ground pepper
3 c. Cooked wild rice
