Rainy Day Recipe Ideas

It's been raining in NYC non-stop since yesterday. When it rains you just want to be indoors, relaxing watching a good movie, catching up on shows you missed on Netflix or reading a good book. Rainy days are just one of those days where you can give yourself an excuse not to really cook. But if you must cook I wanted to give you some ideas to try out on a rainy day. Ingredients
1/2 cup grape tomatoes, halved
1 tablespoon red wine vinegar
1 tablespoon extra-virgin olive oil
Salt and freshly ground black pepper, to taste
5 large egg whites or 1 1/2 cups egg whites
1/4 cup roughly chopped flat-leaf parsley leaves
3 cups mixed baby greens
Ingredients
2 pounds bone-in, skinless chicken thighs
Salt and freshly ground black pepper
1 teaspoon extra-virgin olive oil
5 cloves garlic, finely chopped
2 large onions, finely chopped
2 large red peppers, finely chopped
1 tablespoon sweet Hungarian paprika
1 teaspoon hot Hungarian paprika or 1/4 teaspoon cayenne pepper
2 tablespoons tomato paste
2 cups low-sodium chicken broth
3 cups frozen brown rice, thawed
2 tablespoons chopped fresh flat-leaf parsley
6 tablespoons reduced-fat sour cream
Ingredients
1 1/4lb pork fillet, trimmed and cut into 1-inch pieces
1/4 teaspoon dried thyme
Salt and freshly ground black pepper
4 teaspoons olive oil
2 carrots, diced
1 rib celery, diced
1 onion, thinly sliced
1 red or green pepper, diced
3 tablespoons sweet paprika
2 tablespoons tomato purée
1 teaspoon crushed caraway seeds
2 cloves garlic, minced
1 cup low-sodium beef broth
1 teaspoon red wine vinegar
2 cups cooked whole-wheat egg noodles or pasta
Chopped chives, for garnish

1 cup frozen green peas and carrots
1 cup cut-up cooked chicken
1 can (10 3/4 ounces) condensed creamy chicken mushroom soup
1 cup Original Bisquick™ mix
1/3 cup milk
Paprika, if desired
