Quick & Easy Cruciferous Vegetable Recipe Ideas

What are cruciferous vegetables? Well cruciferous vegetables according to the U.S. National Library of Medicine National Institutes of Health and Dr. Axe are unique because they are rich in sulfur containing compounds called glucosinolates which support detoxification and indole-3-carbinol which greatly reduces the risk of breast, colon and lung cancer. Lately I've been getting more into adding at least one cruciferous vegetable to my meal per day, because I get my vegetable intake and because it's so good. So now that we know that cruciferous vegetables are important and very good for you, I thought I'd share some cruciferous vegetable recipe ideas. The first cruciferous vegetable is Bok Choy
Ingredients
1 tablespoon vegetable oil
2 garlic cloves, chopped
1 shallot, chopped
1 pound baby bok choy, rinsed, cut into quarters, with core intact
1 tablespoon reduced-sodium soy sauce
Another cruciferous vegetable is cabbage
Ingredients
Pancakes
2 extra large eggs
1/2 cup water
1.5 Tbsp soy sauce
1 Tbsp toasted sesame oil
3/4 to 1 cup all-purpose flour
4-5 cups shredded green cabbage
1 carrot
3 green onions
2 Tbsp oil for frying

Another cruciferous vegetable is Broccoli
Ingredients
3 slices white sandwich bread
Coarse salt and ground pepper
3 cups whole milk
1 cup shredded white cheddar (4 ounces)
3 tablespoons olive oil
1/4 cup all-purpose flour
2 heads broccoli (about 2 pounds total), florets finely chopped, stalks peeled and finely chopped
Another cruciferous vegetable is Cauliflower
Ingredients
1 large head cauliflower
6 tablespoons vegetable oil, divided, plus more for grill
1 bunch scallions, trimmed
Kosher salt, freshly ground pepper
1 1-inch piece ginger, peeled, grated
1 garlic clove
½ cup (packed) fresh cilantro leaves
2 tablespoons fresh lime juice
Gochugaru (Korean red pepper powder), toasted black sesame seeds, and sesame oil (for serving)
